Renee! Thanks for the email! I have the perfect treat for you that you can make anytime of the year. Cran Berry walnut Cookies are simple to make, store well, and light in even fruit sugars. These chewy cookies are a sure fire way to please Santa, and get what you want for Christmas! Enjoy
Cranberry Walnut Cookies
4 c walnuts soaked overnight, rinsed and drained
juice of 1 large ripe orange
Pinch Himalayan salt.
Pulse ingredients in food processor. Be careful not process mixture to a mush.
add 1 1/2 c dry cranberries, and pulse a few times more. Batter should be chunky like oatmeal, not mushy.
If the batter is not sweet enough for Santa, add a few table spoons of agave nectar or Raw Honey. A few drops of Stevia may alson do the trick.
Pulse a few more times. Using an ice-cream scoop, scoop up batter into balls on teflex sheet. Press each ball carefully into a patty using the palm of your hand. If the edges are crumbly, simply cup it in and pat it gently. The orange juice and sweetener will hap it stick together once it dries.
Place cookies in dehydrator at 105 for 6-8hrs. Flip, and continue drying until they reach the desired dryness. I like to flip these cookies over, and continue drying for only another 3 hrs. These cookies are best when still soft and fresh out of the dehydrator!
Recipe variation: For an added sweet touch, frost cookies with mac cream, found in previous archives. Serve with seed mylk!
Store cookies in a Tupperware container in the fridge for up to 2 weeks. I personally haven’t had them last that long in the fridge…..they are that good!
