SPICY ALMOND THAI NOODLES

Terra Bella Cafe in Redondo Beach continues to gain a reputation for its diverse flavors and unique dishes. Among the many popular ethnic dishes is the Almond-Thai noodles! This dish is simple to make because it does not require obscure ingredients, odd appliances, or raw-Food Chef training. Make this meal ahead of time for easy lunch assembly for your work week. Simply leave the sauce separate from the veggies until ready to enjoy.

Spicy almond Thai bowl. serves 8

Veggies needed:

1 head Napa cabbage shredded thin

2 zucchinis made into noodles using mandolin or spiroolie.

2 c purple cabbage shredded

2 c bean sprouts rinsed and drained

2 med. Carrots sliced into rounds or made into noodles using peeler, madoline or spiroolie.

Toss all vegetable together in large bowl. set aside

Almond Thai Sauce:

¼ c agave

½ c lemon juice

1 c pure water

1 in fresh ginger grated using microplane

 ¼ tsp cayenne

1 ½ TB nama shoyu    (or substitute with 1 tsp salt pluse 2 tsp red miso)

Blend well, slowly add 1 c almond butter. Blend till creamy.

Options for serving: Pour over veggies and toss, then plate or let guests serve themselves.

 Also you may Plate veggies in individual serving and pour sauce over.

Garnish with fresh cilantro, mint and basil chopped

Pinch of black sesame seeds on each dish.
