FOOD THAT RAWKS! Holiday edition
Once again, I have promised my mother I wouldn’t rant and rave too much about my opinions on Turkey dinner options so I will keep this brief my friends. =)I invite others to take a good look into what they choose to give thanks with especially in times gratitude. I respect the “tradition” around ThanksGiving dinner and I am also looking for other ways to celebrate that doesn’t harm animals raised in factory farms, pumped with chemicals and poisons that humans ingest at the table. Instead of roasting a turkey or ham and instantly feeling the sedating effects of chemical injection, I encourage you all to try a animal free veggie loaf to give thanks over. I am not talking about a Tofurkey, or the soggy Tofu loaf with disquising spices…BLAH! Veggie loafs are easier to digest and assimilated by the body. Veggie loafs are quicker to make than a Turkey and they even make excellent leftovers to boot! You will even be able to play football in the yard after eating a veggie loaf instead of passing out on Grandmas couch catching flies!
No-Turkey Loaf
1 ½ walnuts soaked
3 TB olive oil2 celery sticks chopped
1 c carrots chopped
1/2 c white onion chopped
Process all ingredints in food rpocessor till well combined. Keep it chunky, not smooth. We want it to look liek “stuffing” not canned cat food.
Then hand mix in:
½ c leeks chopped
1TB sage
1TB marjoram
1TB thyme
2tsp salt
½ avocado mashed
You can leave it “raw” and serve this mixture as a side dish. or dehydrate it to resemble a loaf.
Form into a rectangular loaf about 2’’ tall on a teflex sheet and dehydrate for 4-8 hrs.
You can dehydrator for up to 12 hrs, or till you get your desired dryness.Recipe can be used as stuffing if not dehydrated.
Recipe Variation: Instead of just a loaf, make patties, stuffed peppers, “meat” balls or even neat sticks. Swap out the spices to mimic other flesh foods.Come back next week to learn to make pumpkin’ pie!Recipes are created by Sweet Melissa “Mango”, Owner and Chef of Terra Bella Café and The Good Witches’ Bay-Cure-y.
