
”Foods That Rawk!” Pumpkin Pie!
Your Holiday meal is no where complete without Pie! Our Raw-Vegan Pumpkin Pies are sweet slices of heaven at Terra Bella Café! Getting ready-to thaw pies sure are convenient, yet nutritionally do a thing for us. Doesn’t it make you squeal that you can make your own pie and it’s like medicine for your body and soul. Your momma sure is gunna love you for this one!
Because these pies are essentially made of fresh fruits, veggies and nuts…why not have them for breakfast!
basic crust:2 c pecans½ c gold raisinsPinch saltPulse in food processor until mixture resembles graham cracker. Do not over process into nut butter. Press crust firmly into large glass pie plate.Filling:1 1/2 c cashews soaked2 c carrot juice1 1/2 c soft pitted dates3/4 c agave nectarUsing high speed blender, blend till smooth, then add:3 c Young Thai coconut meat1 1/2 TB vanilla3 TB pumpkin pie spice¾ TB salt + 1/4¾ c Coco Pura Coconut oil Continue blending till smooth, then pour over pie crust. Let freeze for 3-4 hours. Until center of the pie is firm to the touch.
Recipe Variation: Once pie is set. serve each slice topped with a dalop of vanilla cashew cream! Recipe below

Vanilla Cashew cream recipe
1 ½ c cashews 6 oz¼ c agave1 TB vanilla½ c pure water. Blend in high speed blender till smooth.
