FOOD THAT RAWKS! ” Jica-No-potato salad. part of the Back yard RawBQ recipe series.Awwww…the smell of a back yard BBQ and the sound of kiddies splashin’ in the pool. Summer is a time for families to gather and enjoy great Pic nic home cooked-style food. Trouble is most food we celebrate as “comforting” is the farthest thing from healthy and vital! Before you load up your styrophome plate up with dead animal parts and colon cloggin’ bread rolls, choose a cleaner, greener way to eat. Did I just say that?!! Ohhh.. yes! your read that right! The foods we have been used to eating are in fact as they sound: disgusting and a tad offensive. Most dishes lovingly brought to BBQs have very little if any nutritional value, are hard to digest, and contained very little healthy fiber or life force!Don’t worry about the food of BBQ days past, slip into the healthy possibilities of the future! Raw-Living dishes are faster to make than the standard BBQ fare. With an earth friendly, nutrient dense raw dish…you will be the life of the party! Instead of napping in the sun like most cooked-sedated pic nic goers, you’ll be out on the slip and slide with bountiful energy or behind a jet ski pulling some crazi tricks!Get out your water wings and show off that great Raw Bod of yours, all because you pass on the junk food and go right to the raw foods!
Jica-No potato salad makes one bowl to bring to a party!3 lb jicama root peeled and cubed4 ears of corn de-stemmed1 red bell pepper chopped1 c fresh dill chopped1 c red onion diced1 c Cucumber peeled, seeded, chopped3 stalks of celery finely chopped
4 green onions finely chopped
Garnish with a pinch of paprika!
Stir in dill dressing. Add a little at a time until desired consistency is reached. If there is dressing left over, place in jar and use on a salad tomorrow!
Dill dressing1 1/2 c pure water1 1/2 c cashew 2 TB stone ground mustard 4 garlic cloves 1oz1 c lemon juice1 TB saltBlend well.
