Chef Melissa Mango
Melissa got her first taste of Live foods while volunteering at Tempe’s Rawsome Café. Returning to Idaho, she founded The House of Vibrance, which hosted a wide array of raw food speakers and events. Melissa’s next venture, Birdie Basket, served as Idaho’s first Live foods catering business, offering private demos and lectures. Melissa also has instructed at Iowa Community College, local learning centers, Wild Oats, and the ACF (American Culinary Federation) Idaho chapter. Melissa has worked aside Chef Eric Rivkin and is a guest Chef and a volunteer instructor at The Tree of Life, Center. Melissa has won most creative dish at the Grill Masters in Boise Id as well as best show at The Texas Vegetarian Chili cookoff. Melissa’s approach to creating new recipes is “Keep it fresh! Keep it simple!” Currently Melissa is opening Terra Bella, her first live foods cafe in Redondo Beach california. “Meat-less Kabobs?!!” Billie bob hollered
“I can’t NOT eat meat at a friggen’ BBQ!” I hear many of my clients squeal.
Yep, turn off those expensive grills, and get out your cutting boards! A great tasting kabob is all in the sauce!
I think we are all adults here, so I think it’s safe to say I won’t hurt anyone’s feelers by telling you exactly how it is and what our food choices have become. Just because someone did the dirty work for you, by conveniently wrapping the meat, or slid it between two slices of bun, meat is still murder folks.
The sooner we all figure that out and move onto “greener pastures” the better. There is something we can do for our health, the planet and for the animals and that is stop relying on other animals for food and start grazing! Read the rest of this entry »

FOOD THAT RAWKS! A Healthier Bloody Mary!

The “Healthier” Bloody Mary 1 serving
1 1/2 oz Potato vodka or other Organic or home made Vodka..
3 oz Vine ripe tomato juice ( apx 6 tomatoes juiced in home juicer or blended in blender for chunkier texture)
1/2 oz lemon juice
Trocomere (seasoning) to taste
Wheat free Tamari to taste apx 1 TB
black pepper to taste
1 tsp freshly grated horseradish root
2 tsp ancho chili powder
1 tsp crushed red pepper
Fill your shaker with ice, pour in vodka, all seasonings and tomato juice. Cover shaker, skake shake shake. Pour into clean glass. Garnish with 1 celery stalk with leaves attached, lemon wedge, 2 Adams olive Ranch Black olives.
Drink can be a wonderful Virgin cocktail!

“FOOD THAT RAWKS!” Healing colds and flus

During the tail end of the cold season, many people are fighting off colds even those who are eating healthy foods. Often clients ask me “what can I drink to help with this cold?!”
I see too often people assuming that a spendy bottle of fruit juice in the health isle will help with their symptoms. The truth is when the body is throwing you all the sure signs to let it heal, one has to truly let the body do it’s work. The body can heal and repair it self best by relieving some stress of digestion with proper nutrition. This calls for fresh juices! I recommend mostly green for the fighting of colds. Green juices are very healing, alkalizing and nutritious! Keep away from any bottles, pasturized juices no matter what the lable says. It’s a waste of money and offers nothing for your body. In 2008 I made an agreement with myself to eat more salads, do more Yoga and spend more time reading. If you’re like me when it comes to eating more raw foods especially during the winter, I could go weeks easily avoiding a good green salad. As good as it is for me, I woudl also dodge a kick ass Yoga class. A nice dressing will get me to eat any pile of greens much like a cute partner to encourage me to sit in the first row of Yoga class.This dressing is simple to make, stores easily in the fridge and can travel well if you decide to take it with you when dinning out. If you do not arm yourself with yummie dressing, you will be at the mercy of the provider on a night out. Who knows what quality of olive or other goods a restaurant carries these days if you are living in a not-so-hip to raw foods part of town. Once again, I have promised my mother I wouldn’t rant and rave too much about my opinions on Turkey dinner options so I will keep this brief my friends. =)I invite others to take a good look into what they choose to give thanks with especially in times gratitude. I respect the “tradition” around ThanksGiving dinner and I am also looking for other ways to celebrate that doesn’t harm animals raised in factory farms, pumped with chemicals and poisons that humans ingest at the table.
